Tawny Port Christmas Fudge

December 19 by Michelle Leave a Comment

The Best Fudge Recipe

Want to take a classic Christmas treat to the next level?

Fudge is already an indulgent delight, but I’m going to show you how to up the ante by adding Tawny Port, which has served as a personal  secret ingredient for years.

The secret is out and it’s delicious!

What exactly is Tawny Port?

The Best Fudge Recipe

It is fortified wine from the Douro Valley of Portugal.  The base wine is made from any combination of authorized grape varietals, including Touriga Nacional, Touriga Franca, Tempranillo, Tinta Barroca and Tinto Cao.  Fermentation is halted at the halfway point and brandy (a grape-based spirit) is added, leading to residual sugars that make for a sweet wine high in alcohol.

Tawny Port is aged in oak from 3 years (Basic Tawny Port) to 7 years and up (Reserve Tawny Port).

It gets the name Tawny because oxygen seeps into the wine as it is ages and changes the original ruby color to golden brown.

Now let’s back to the fudge by bringing chocolate and wine together as nature intended.

Here’s what you’ll need:

1 tub of Marshmallow Fluff (7 ounces)
1½ cups sugar
1 small can evaporated milk (2/3 cup)
¼ cup unsalted butter
2 tbsp Tawny Port
½ tsp salt
1½ cup milk chocolate chips
1½  cup semisweet chocolate chips

Here’s how you do it:

Line a baking pan with aluminum foil and spray the foil with a no-stick spray like Pam and set it aside.

Place a (separate) large pan over medium heat and add the fluff, sugar, milk, butter, and salt.

Stir continuously, mixing everything together while bringing to a boil.

Keep stirring at a gentle boil for 5 minutes.

Remove pan from burner and place on a heat resistant surface.  Immediately pour in the Port and all of the chocolate chips and stir until chocolate is melted and evenly combined.

Pour it all into a baking pan, then set aside in the refrigerator.  The mixture will chill and firm up over the next couple hours.

The Best Fudge Recipe

Once the fudge is chilled, carefully place baking pan upside down on a cutting board and separate the pan from the fudge.

Discard foil.

Cut fudge into squares and serve!

This fudge is seriously crazy good and everyone will be dying to know your secret ingredient!  I hope you enjoy this chocolatey treat, but remember to keep it out of reach from children and dogs – this is an adults only indulgence!  I recommend enjoying this treat while working on Christmas crafts.
